Sesame Ginger Chicken



This is a simple and yummy crock pot meal, and a staple in our house.


1 large package of boneless skinless chicken thighs
1/2 cup soy sauce
1 cup ginger ale
1/4 cup sesame seeds
1 cup brown sugar
4 tsp ginger, more if fresh
Sriracha for spice, to taste.

Combine ingredients and pour over chicken thighs in a large crockpot.  cook on low for 5-6 hours, rotating chicken so all pieces get covered.  Pull out chicken and reserve juices.  Separate the fat and pour juices into a pot.  I usually drizzle a little sesame oil over thicken at this point.  Simmer on medium until reduced by at least half.  You can add a little more soy, ginger and sugar if it needs more flavor.  Occasionally I'll add cornstarch to thicken it.  Serve with rice.  Leftovers are good in one of those asian cole slaw recipes.
